How to make garlic butter noodles?

In a nutshell, cook the pasta first because it takes longer. Near the end, cook the sauce and combine both. Now let’s go over the recipe step by step.

Prep the ingredients.

This garlic butter sauce for pasta recipe is easy to make, and the prep is quick too. Quickly peel garlic, then slice the cloves super thin.

Chop the parsley. Split the unsalted butter into two parts. Use about ¾ at the beginning and save the rest for the end. And measure the pasta you’ll add to the sauce.

Start with the pasta.

You need about 4 minutes to make this butter garlic sauce for pasta, so start with the pasta first. Fill a big pot with water. Add a good pinch of salt. Bring it to a boil. Want to know how much salt to use and how much water to cook the pasta in? Check the details below.

Now drop in your pasta and cook it 2 minutes less than what the package says. That way, the pasta stays al dente and soaks up the garlic and herb pasta sauce, without going too soft. Want more details on how to cook al dente pasta? Read here.

Don’t forget the pasta water!

One minute before the pasta is done, scoop out some of the starchy cooking water. You’ll need this magic later. It’s always good to save a little extra, just in case.

How to make garlic butter sauce for pasta?

About 4 minutes before the pasta’s done, set a pan over medium heat. You’ll only need a few minutes for this easy butter garlic sauce for pasta. We’re using level 5 out of 9 on our stove. If your stove has numbered settings, use that as a guide. If not, just go with medium heat.

Warm up the pan. Drop in the bigger chunk of butter.

As soon as it starts to melt, add the sliced garlic. Cook at medium heat and keep stirring for 2 to 3 minutes. Don’t let it brown or fry—if it does, it’ll taste bitter.

Look—the garlic is starting to soften and smell amazing!

When it just begins to change color, throw in the chili flakes and give it a quick stir. Adjust the chili to your taste. Want garlic chili pasta? Add more for extra heat. Or use less for a mild, peppery flavor.

Now let’s finish the simple garlic pasta sauce. Carefully pour in a bit of pasta water. Be careful—it might sizzle and splash! Mix quickly until the pasta water and butter combine. It’s that simple and quick. Your butter garlic sauce for pasta is ready!

Bring in the pasta!

Drain the pasta and add the cooked pasta straight into the pan. Mix it with the sauce and give it a taste.

Need more salt? Add a pinch now. We salted our pasta water well, so we’re good!

Add a splash more pasta water.

Now some last touches! Add the last bit of butter you saved. Stir until it melts and your garlic buttered noodles look glossy.

Time to garnish and serve!

Sprinkle the chopped parsley on top. It adds freshness and color, so don’t skip it. We think parsley works best for a garlic herb pasta sauce, but you can use other herbs if you prefer.

If the sauce feels too thick, just add a splash more pasta water. Don’t be afraid to adjust as you go. Want to know why pasta water is so important? Or how much salt and water to use when cooking pasta to get perfect pasta water for this sauce? Check more here.

Ingredients

To cook this recipe for garlic butter noodles, you just need:

Pasta

This garlic sauce for pasta uses just a few ingredients, and you’ll end up with a delicate garlic butter coating. That’s why it’s best to avoid pasta with holes or curves, like penne or fusilli. Long pasta works better here. You only need enough to coat each piece, so the pasta still shines through.

You can make garlic butter spaghetti, garlic fettuccine, tagliatelle, or egg noodles. This kind of pasta catches just the right amount of sauce, so every bite tastes just right.

Butter

For these buttery garlic noodles, go with unsalted butter. Why? Because you might not need any extra salt in this recipe. A few ingredients already bring salt.

First, you usually cook pasta in well-salted water. And pasta water is one of the main ingredients in this simple garlic sauce for pasta. That water is salty. Not sure how much salt to use? Check here.

We don’t add any cheese to this recipe. But if you do, cheese brings in more salt, too. That’s already a lot.

You can use salted butter if that’s what you have, but keep in mind—it adds even more salt. And when you combine that with salty pasta water and maybe cheese, the whole dish can turn out too salty.

Garlic

For this garlic pasta sauce recipe, use fresh raw garlic—not garlic powder. One large head of garlic works well. You’ll find the exact weight in the recipe card below. Peel the cloves and slice them super thin. That’s it. No food processor or special tools needed.

This gives you maximum flavor, and the garlic won’t burn. It cooks fast and blends right into the butter.

Don’t use roasted garlic. Why? When you roast a whole head in foil in a baking dish, it turns soft, sweet, and mild. That’s perfect with veggies or potatoes—but not for this sauce.

Chili flakes

We’re adding ½ teaspoon for two servings, and the pasta comes out pretty spicy. Love more heat? Add more chili for proper chili garlic pasta.

Don’t like too much spice? Go with just ⅓ teaspoon for two servings of pasta.

Want to skip spicy garlic pasta completely? You can. Or if you want to swap the chili, use ground black pepper instead.

Salt

Add salt to taste. Add it at the end, when your garlic butter noodles are ready. Taste and adjust.

Use more or less—it’s totally up to you. It depends on your butter. If you’re using salted butter, go easy. If your pasta water was salty, you might not need any extra at all.

Fresh parsley

Parsley garlic sauce is a classic. It’s fresh, garlicky, and so delicious. Chop fresh parsley finely and add it at the end.

The best garlic butter noodles are the ones that fit your taste. We give you the base—butter, garlic, and pasta water. You can adjust the spices and herbs however you like. Skip the chili or use less. Don’t like parsley? Use a different herb.

How to Cook It Right: Pasta, Sauce Tips & Storage

This garlic butter noodles recipe is easy. But there are a few things you need to get right—mainly how to cook the sauce and how to get the pasta just right. Let’s start with the sauce.

How to Make Perfect Garlic Pasta Sauce

To get a silky, smooth sauce for garlic butter noodles, you need an emulsion. That means combining butter and pasta water just right. That’s the most important part of the sauce. Here’s how to do it—plus a few extra tips:

  • This Italian garlic sauce is made from butter and pasta water. Don’t use plain boiled water. The starch in the pasta water helps create the sauce. It blends with the butter and turns into a smooth, light emulsion.
  • Cook at medium heat. Don’t use high heat, or the sauce could burn. Once you add the garlic, cook it gently for a few minutes, until it smells amazing.
  • Don’t wait until the pasta is fully cooked—take it out 2 minutes early. That keeps it al dente in your buttered garlic noodles. Don’t rinse the pasta. You need the starch on it to help the sauce stick.
  • Cook your pasta and sauce at the same time. The garlic sauce takes about 4 minutes, so start it 4 minutes before the pasta is done. This way, you save time, and your butter garlic noodles will be ready fast.
  • Use fresh garlic. Slice it very thin. This helps infuse the butter with garlic flavor and keeps it from burning.
  • There are just a few ingredients in these noodles with butter and garlic, so go for good-quality ones.
  • Use long pasta. Spaghetti or linguine are perfect for this kind of silky sauce.
  • Garlic and parsley are a great combo. Parsley gives a fresh kick and works beautifully with garlic. Don’t like parsley? Use another herb instead. Still, keep it a garlic and herb pasta—you need that herby touch to balance the garlic.

When you cook quick Italian pasta, getting the pasta right is key. The same goes for these easy garlic butter noodles. So, how do you make sure it’s just right, not too soft and not too firm in the sauce?

How to Cook Pasta?

Don’t just follow the package instructions. Sure, they tell you how long to cook pasta to reach al dente. But for pasta with sauces—like lemon, garlic, or butter — stop cooking 2 minutes earlier. So if the package says 10 minutes, cook it for 8. Then move your pasta straight into the hot sauce you just made. This works for both red and white sauces.

The sauce is already hot. While you mix the pasta into it, it cooks those last 1–2 minutes right in the pan. If you cook pasta to al dente in water, then let it cook more in the sauce, it turns mushy.

So to make garlic parsley pasta that stays al dente, undercook your pasta slightly in the water. Let it finish in the sauce.

What Is the Ratio of Salt to Water for Pasta?

When you cook pasta, follow this simple rule:
100 grams (3.5 oz) of pasta = 1 liter (4¼ cups) of water + 10 grams (1 heaping teaspoon) of salt.

Don’t cut the salt. It’s what makes the pasta taste good.
But don’t use too much water either—not when you’re planning to make a sauce.

Why? Because you need that starchy water from the pot. It’s gold. It’s one of the most important ingredients in this butter garlic pasta sauce recipe. It makes the sauce smooth and helps bring everything together. That smooth mix of butter and pasta water is called an emulsion.

If you use too much water, the starch spreads out too much. And then your sauce won’t turn out right.

The only time you want lots of water is when you’re making pasta for a salad. In that case, rinse the pasta at the end.

But not for sauces. Keep the starch. Keep the flavor.
Especially for these garlic and butter noodles, the sauce is just butter and pasta water. So you need that starch to bring it all together.

How to Make Garlic Herb Butter Pasta Ahead

Butter and garlic pasta isn’t the best dish to make ahead. Garlic has a strong smell, and it gets even sharper over time. If you do have leftovers, make sure to store them right.
You only need about 10 minutes to make this simple garlic butter pasta. It might take a bit longer depending on the pasta, but it’s still quick. So it’s better to cook it fresh.

How to Store

Keep it in an airtight container with a tight lid. You can store it in the fridge for up to 5 days.

How to Freeze

Don’t freeze it. After freezing, this garlic and butter sauce for pasta loses its flavor and just isn’t the same. So skip the freezer.

Cook only the amount you plan to eat fresh—that’s when this pasta tastes best.
If you still want to cook ahead, store it in the fridge and reheat it like described below.

You only need 4 minutes for this garlic sauce recipe for pasta, so why bother freezing? You can make it faster from scratch than you can defrost it!

What’s the Proper Way to Reheat Pasta?

On the stove

The best way to reheat pasta with butter garlic sauce is on the stove. Add a bit of water or saved pasta water.

For one serving, add about 20 grams (1½ tablespoons) of water into a pan. Add the pasta. Cover with a lid and bring it to a boil. Then lower the heat to medium and reheat for 3–4 minutes. Stir once while it’s heating.

In the microwave

You can also use the microwave. Put this pasta with parsley and garlic in a microwave-safe dish. For one serving, add 20 grams (1½ tablespoons) of water or saved pasta water. Cover with a microwave-safe lid. Heat on full power for 1–2 minutes. Stir once or twice while it’s heating.

What to Add, How to Adjust, and More Recipes

Need ideas for what to add to your homemade garlic butter noodles? You’ve got plenty of easy options.

What vegetarian protein can you add to noodles?

  • Smoked tofu – Cut it into cubes and fry in a pan until golden. Sprinkle on top.
  • Vegetarian bacon – Cut and fry until crisp. Add on top.
  • Mushrooms – Fry in a pan and add to the pasta when it’s almost ready.
  • Edamame – Use peeled edamame, cook it, and sprinkle on top.
  • Cheese – Add the pasta to a bowl and sprinkle with cheese.

The best part? Your garlic butter sauce recipe for pasta takes just 4–5 minutes to prep and cook—and so do these toppings. Quick, easy, done in minutes.

Veggie ideas

Want to add some veggies to this pasta with garlic sauce? Easy. A handful of sautéed mushrooms, some spinach, or a few broccoli florets bring more flavor and nutrients to the dish. Try different veggies each time. That way, your pasta always feels fresh and new. You can also serve it with a simple salad—arugula or any seasonal vegetables work great on the side. Here’s a quick tip for a simple, delicious dressing: drizzle a bit of olive oil over the salad, then sprinkle with a little lemon juice. That’s it—fresh, simple, and so good.

Herbs and spices

Garlic already brings bold flavor, so you don’t need heavy spices. Add a pinch of red chili flakes or ground black pepper to your homemade garlic sauce for pasta right after the garlic. It helps balance the taste.

For a fresh finish, add finely chopped parsley. It’s the classic choice—fresh, slightly peppery, and it doesn’t overpower the garlic.

Don’t like parsley but still want garlic herb pasta? Go for basil. Add a few fresh leaves right before serving.

Rosemary works too. Just a few fresh rosemary leaves add a deep, earthy flavor that’s perfect with creamy, buttery sauce—and they smell amazing!

Cheesy Parmesan

The classic Italian versions of garlic butter pasta recipes don’t use cream. But if you want a cheesy touch, just sprinkle a bit of freshly grated Parmesan cheese on top when you serve the butter noodles with garlic. That gives the pasta an extra boost of flavor.

You can use freshly grated Parmesan—or even better, Parmesan shavings. Use a potato peeler to shave off thin, broad, extra-long pieces. It’s our favorite way to add Parmesan to pasta.

And the best part? This way, you keep this easy garlic butter sauce for pasta totally hassle-free.

If you want to mix cheese directly into the sauce, there are a few things to keep in mind. Want to learn how? Check out our recipe for lemon butter pasta and see how we do it there.

Cook it 2 minutes less than what the package says. That way, when you add the gluten-free pasta to the sauce and cook it for another 1–2 minutes, it stays al dente.

Other than that, you don’t need to change anything in this garlic butter noodles recipe.

Equipment

  • Pot
  • Pan

Ingredients

  • 200 g pasta
  • 150 g pasta water (Save the pasta water right before draining — it’s better to scoop it when the pasta is almost ready, not at the beginning.)
  • 80 g unsalted butter (split the butter into two parts — ¾ and ¼)
  • 1 small head of garlic (each head weighs about 25 g / 0.9 oz whole, ~20 g / 0.7 oz peeled, roughly 4–5 cloves)

Spices:

  • ½ teaspoon chili flakes (use less for a mild version, or swap with ground black pepper)
  • ¼ teaspoon salt (or adjust to taste)
  • 1 tablespoon finely chopped parsley

Instructions

  • Boil water and add salt. Not sure how much? Check how much salt and water you need here.
  • Add the pasta and cook it for about two minutes less than what the package recommends. Why? Check here. One minute before you take it out of the water, scoop out some of the cooking water and set it aside. Keep a little extra just in case.
  • Peel the garlic and slice it very thinly. Finely chop the parsley.
  • Four minutes before the pasta is ready, start the butter-garlic sauce. Set a pan over medium heat. If your stove has numbers, use about 5 out of 9.
  • Split the butter into two parts — ¾ and ¼. Add ¾ of it now. Let it melt gently, but don’t let it brown or fry.
  • Add all the thinly sliced garlic. Stir for 2 to 3 minutes. Don’t let it fry or turn brown.
  • When the garlic just starts to change color, add the chili flakes. Mix quickly.
  • Add about ⅓ of the reserved pasta water. Stir well until the pasta water and butter come together into a smooth sauce.
  • Drain your pasta, but don’t rinse it. Add the pasta straight to the sauce. Mix everything well. Taste and add salt if needed.
  • Add the rest of the reserved pasta water to reach the right sauce consistency. If it looks a bit watery at first, don’t worry — the pasta will soak it up.
  • Add the remaining ¼ of the butter. Stir until it melts and blends into the sauce.
  • Sprinkle with chopped parsley and mix well. If your homemade garlic pasta sauce feels too thick, just add a bit more pasta water.

FAQ

When to add garlic to pasta sauce?

The best time to add garlic to pasta sauce is right after you heat the butter or olive oil in the pan.

Heat your butter or olive oil over medium heat.
Once it’s warm, add the garlic and sauté it gently.
Cook just until it’s fragrant and soft — not browned. Burnt garlic can turn bitter and overpower the sauce.

Once your garlic is ready, you can move on to adding tomatoes, cream, herbs, or whatever base your sauce uses.
This step builds flavor right from the start and gives your pasta sauce that rich, savory depth.

Can you put raw garlic in pasta sauce?

Yes, you can add raw garlic to pasta sauce — but it’s best to cook it gently first.
Here’s how to do it:

Peel and slice the garlic thinly (or mince it if you prefer).
Add it to melted butter or warm olive oil in a pan.
Cook on low to medium heat, just until it becomes fragrant.
Don’t let it fry or brown — that can make the garlic taste bitter.

Once softened, you can add the rest of your sauce ingredients, like tomatoes, cream, or herbs.
