3-Min Butter Sauce for Pasta: Lazy Pasta with Butter, Cheese & Water

Ingredients
- 240 g pasta
- 150 g pasta water
- 60 g butter – divide it into 2 pieces: 40 g and 20 g. Use the bigger piece at the beginning and add the smaller one at the end.
- 40 g cheddar cheese – buy a block and grate it. Don’t use pre-shredded cheese.
Spices:
- ¼ tsp chili flakes
- ¼ tsp salt add to taste
Instructions
- The sauce cooks very fast — in just 3 minutes. So, start by cooking the pasta first. Salt the boiling water well and add 240 g of pasta. Cook it 2 minutes less than the time on the package. This keeps the pasta al dente in the sauce. Before you drain the pasta, scoop out 200–250 g of starchy pasta water. You only need 150 g for the sauce. But it’s always good to have more so you can adjust the texture. Don’t rinse your pasta.
- Three minutes before the pasta is ready, start cooking the sauce in a frying pan over medium heat (we use setting 5 out of 9 on our stove). Add 40 g of butter. Melt the butter gently. Stir constantly. Don’t let it fry. Do not let it brown.
- Add ¼ tsp of chili flakes and stir for 1 minute.
- Add about 50 g of pasta water and stir until smooth.
- Add the cooked pasta. If needed, add more pasta water and ¼ tsp salt. Stir.
- Add 40 g of grated cheddar cheese and stir.
- Add 20 g of butter, stir again, and remove from heat.
- Serve immediately.
