Have you always heard how healthy and good Brussels sprouts are for you? And then bought and cooked them only to discover they were somehow bitter. We feel you. Brussels sprouts have a particular taste. If you lack a seasoning, they are just earthy. And bitter. In this recipe, we add unique seasoning to make sprouts incredibly tasty.
There are many Brussels sprouts recipes with a lot of butter and parmesan. And they do taste delicious. But they taste more like butter and parmesan. Not Brussels sprouts. In this recipe, you will still taste Brussels sprouts. They are also going to be slightly bitter. But adding all the seasoning will balance the taste. For a little bit of spiciness, add garlic and chili peppers. To achieve a slightly sweet flavor, add sesame oil and sesame seeds. For saltiness, use soy sauce. For mildness and gentle acidity, rice vinegar. Fry the sprouts in brown sugar for a few minutes to caramelize them. All of this will balance the taste of naturally bitter Brussels sprouts. How to Cut Brussels Sprouts to Speed Up Cooking Process
First, cut off the stem by around 5-7 mm. Then, remove loose, damaged, or dry outer leaves. If your Brussels sprouts are fresh, you will have fewer outer leaves to remove. Cut the sprouts based on their size. If the Brussels sprouts are large, cut them in half. If they are small, leave them whole. Cutting Brussels sprouts this way will keep them crisp but reduce the cooking time. After cutting, rinse Brussels sprouts under running water. No need to dry Brussels sprouts with a kitchen towel. We are adding water to them anyway because they need to get tender.

Brussels Sprouts on Stove: Recipe, Hacks, and Tips
You can prepare this Brussels sprouts recipe in one pan. Start with cutting and washing Brussels sprouts as described before. As always, we recommend measuring all ingredients before you start to cook. The cooking time is short. It can be challenging to measure everything during cooking. Because you need to stir frequently.
Cook a recipe on a high heat. We used 7 out of 9 on our stove. Keep this cooking mode set all the time. The cooking time is short. It takes around 15 minutes to prepare these seasoned Brussels sprouts.
Heat sesame oil. Add peeled Brussels sprouts. Add water and simmer under the lid. After the water is gone, add sugar. Let the sugar coat the sprouts. They get slightly caramelized. We use brown sugar in this recipe. But you can substitute it for white sugar. We don’t recommend using maple syrup or other liquid sweeteners. White or brown sugar adds a slight crisp to Brussels sprouts. This doesn’t work with liquid sweeteners. Then, add the spices, soy sauce, rice vinegar and fry until tender. Spoon into a bowl and sprinkle sesame seeds on top. This will add even more crispiness to tender Brussels sprouts.
The Best Way to Roast Brussels Sprouts
The best and quickest way to roast Brussels sprouts is using a pan. For seasoned Brussels sprouts, we recommend preparing them to absorb all spices and flavoring first. To do so, simmer Brussels sprouts under a lid for 7-8 minutes with a little water. Until they are partially cooked. After the water is gone, start adding seasoning. Now that the Brussels sprouts are tender, they can properly absorb the flavoring.
Add sugar, spices (garlic, chili pepper), soy sauce, and rice vinegar. Stir and simmer a bit after every seasoning. Once ready, add sesame seeds for extra crispiness.
Delicious with Soy Sauce
We add soy sauce instead of salt in this recipe. We recommend keeping it this way and not substituting it with salt. Soy sauce is not only salty but also adds umami flavor. The tender and slightly crisp Brussels sprouts texture gets a proper umami boost. Soy sauce makes Brussels sprouts rich, dark green, and sometimes brownish. Rice vinegar, brown sugar, and sesame oil add mild, nutty, and caramelized flavor. This is the most delicious combination to make seasoned Brussels sprouts.

Seasoned Brussels Sprouts: Easy & Roasted | Umami Boost
Ingredients
- 500 g peeled Brussel sprouts around 700 g unpeeled Brussel sprouts
- 20 g sesame oil
- 50 g soy sauce
- 10 g rice vinegar
- 10 g brown sugar
- 100 g of boiling water
Spices
- ½ tsp. chili pepper
- ½ tsp. dry garlic
- sesame seeds optional
Instructions
- Prepare Brussels sprouts. Remove any loose or damaged outer leaves. Trim the stem. Cut Brussels sprouts in half. If the Brussels sprouts are small, you can leave them whole. Rinse under running water. There is no need to dry them with a kitchen towel. We are adding water to a pan anyway.
- Prepare all the ingredients. Measure spices, 20 g sesame oil, 50 g soy sauce, and 10 g rice vinegar.* Use above-average cooking mode (on our stove, we use 7 out of 9).*
- Pour 20 g sesame oil into a hot frying pan, add 500 g peeled Brussels sprouts, and add 100 g of boiling water. Simmer under the lid for 7-8 minutes until the water evaporates.
- Fry the Brussels sprouts for 3-4 minutes, stirring occasionally.
- Add 10 g brown sugar and fry for 2 minutes, stirring constantly.
- Add ½ tsp. dry garlic and ½ tsp. chili pepper, stir.
- Pour 50 g of soy sauce and 10 g of rice vinegar into the pan. Then simmer for 3-4 minutes until the liquid evaporates.
- Sprinkle with sesame seeds.
