  • First, prepare the spices. Mix oregano, ground coriander, white pepper, salt, and sugar.
  • Cut the fresh tomatoes into pieces. Chop the onion and mince the garlic. The sauce cooks very quickly, so it’s best to prepare everything beforehand.
  • Cook the pasta next. Boil and salt the water, then cook the pasta until al dente—or 1 minute less for a firmer bite. It will finish in the sauce.
  • In the meantime, pour oil into a frying pan and add the chopped onion. Fry over medium heat (if your stove has numbered settings, use level 6 out of 9) for 4–5 minutes until transparent.
