Step-by-Step Cheesy Muffins Recipe and Hacks

Ready to tackle the cheesy muffins recipe? Chop dill. Or any other herbs you want to add. Preheat oven to 210 C or 410 F.
Mix liquid ingredients first: buttermilk, odorless vegetable oil, and eggs. Stir with a whisk. Add grated cheese. In a separate bowl, mix dry ingredients. All-purpose flour, baking powder, and salt. Combine liquid and dry ingredients. For perfect texture, sift dry ingredients with a sieve into liquid ingredients. Mix. Add your favorite herbs. We love the combination of dill and cheese. That’s why we are using dill.
Fill each of the 12 muffin molds with batter. Be careful not to overfill. These cheesy muffins are going to grow during baking. And we have to give them enough space to grow. That’s why we aim to fill each mold about two-thirds full with muffin batter.
Here’s an important baking hack we recommend: use silicone muffin molds. They fit perfectly into muffin tin. Why use them? Because muffins don’t stick to silicone. You can easily remove them. Except for this, silicon muffin molds are reusable, unlike paper ones, which you can only use once.

Bake for 20-25 minutes at the lower level of the oven. This cheesy muffin recipe is so quick. The muffins are crispy outside and very soft and cheesy inside.

You can substitute the types of cheese in this recipe. We still recommend using two types of cheeses with a total weight of 300 g. One of the cheese types should melt well. This way, the inside of the muffins will be soft and full of melted cheese.

Cheese, Eggs and a Little Bit of Flour

The base for these cheesy muffins is eggs and cheese. We are using a very small amount of flour. The cheese types we picked are mozzarella and cheddar. As mentioned before, you can substitute the cheese type in this recipe. But keep in mind to use cheese that melts well.

We bake muffins in muffin molds. We don’t recommend baking them in larger molds. Because the muffins are very soft and tender. If you bake them in larger molds, it will be difficult to cut them. 

Cheddar Cheese for Gooey and Moist Muffins

We need cheddar for cheesy muffin recipes. It melts well. That’s why we are using it to make muffins extra soft. The inside is so gooey, moist, and tender. The taste of cheddar is very intense; that’s why we combine it with mozzarella. Mozarella adds a mild and creamy note.

The muffins are perfect to reheat. The crispy crust remains. And the inside, even reheated, is extra gooey and moist. Perfect for meal prepping!

Simple Basic Muffin Recipe

This simple basic recipe for cheese muffins requires only five ingredients. These are all-purpose flour, vegetable oil, eggs, and buttermilk. And, of course, cheese. Use odorless vegetable oil. We need an oil with a neutral flavor. This way, cheese flavor and taste stand out. And the odorless vegetable oil makes the texture extra moist. But doesn’t dominate the taste. Use two types of cheeses. One should melt well.

To make these simple muffins, you don’t need a lot of equipment. 2 bowls and a muffin tin. Mix dry and liquid ingredients in separate bowls. Combine.

The baking time is short. Around 20-25 minutes. We are using silicon molds in this recipe. But you can use paper or steel molds, too. It doesn’t change the taste. Bake on the lower level of the oven. After baking, let the muffins rest for 15 minutes.

You can bake these cheesy muffins in advance and store them in the fridge. Reheat in the oven. The taste stays the same: delicious! The muffins are extra gooey and tender inside. With a crispy crust outside.

Ingredients
  

  • 2 eggs
  • 160 g grated mozzarella cheese*
  • 140 g grated cheddar cheese*
  • 240 g buttermilk
  • 60 g odorless vegetable oil
  • 140 g plain flour all-purpose flour
  • 12 g baking powder
  • tsp salt
  • 1 tbsp finely chopped dill*

Instructions
 

  • Turn the oven to 210 C / 410 F. Grate 160 g mozzarella cheese and 140 g cheddar cheese on a coarse grater. Prepare the muffin molds.
    Grated mozzarella cheese is on the plate. Except for this, there is fresh dill and a piece of cheddar cheese.
  • Mix liquid ingredients: 2 eggs with a whisk, and add 240 g of buttermilk. Mix. Add 60 g of odorless vegetable oil. Mix until smooth. Add 160 g grated mozzarella cheese and 140 g grated cheddar cheese.
    Eggs, mozzarella, cheddar, and buttermilk are in the bowl. These are the ingredients for cheesy muffins.
  • Add 140 g plain flour (all-purpose flour) into a separate bowl. Add 12 g of baking powder and ⅓ tsp salt. Mix.
    We are mixing dry ingredients for cheesy muffins: flour, baking powder, and salt.
  • Combine liquid and dry ingredients. Sift the flour and baking powder mix through a sieve into the bowl with liquid ingredients. Stir with a whisk.
    We are mixing dry and wet ingredients for muffins.
  • Add 1 tbsp of finely chopped dill. Stir.

  • Fill the muffin molds ⅔ full with the batter.
    We are filling baking molds with muffin batter.
  • Bake on the lower level of the oven for 20-25 minutes. Bake at 210 C / 410 F.
