  • 2 garlic cloves*
  • 40 g olive oil

Spices

  • 20 rosemary leaves
  • ¼ tsp salt

  • Cut the garlic cloves in half.* Strip the rosemary leaves from the stem and chop them finely.
  • Set your stove to medium heat. Pour the olive oil into a hot pan.
  • Add the garlic halves to the oil and let them sit for one to two minutes to infuse the flavor. Don’t let the garlic fry.
  • Add the chili flakes and stir quickly. Then add the plain breadcrumbs and the chopped rosemary leaves.
  • Sprinkle in a little salt — but go easy at first. Some breadcrumbs already contain salt, so you may not need any. You can always taste and add more later.
  • Mix and toast for 3 minutes on medium heat. Stir the whole time so they don’t burn. Then lower the heat. We use level 3 out of 9. Keep stirring. Toast for another 3–4 minutes.
  • Mix and toast the crumbs for about 3 minutes on medium heat. Stir the whole time so they don’t burn.
  • Lower the heat. If your stove has numbers, set it to level 3 out of 9. Toast for another 3–4 minutes and keep stirring.
  • When the breadcrumbs turn lightly golden, they’re done. Move them right away to a cold bowl or container. Don’t leave them in the hot pan. They’ll keep cooking and might burn.
  • Remove the garlic cloves.
  • That’s it. You now have crispy, golden seasoned breadcrumbs from plain in just 7–8 minutes.
