Instructions
- Preheat the oven to 180°C (355°F) on top and bottom heat.
- Peel 350 g sweet potato and cut it into small cubes. You’ll have about 300 g after peeling. Slice 2 medium garlic cloves in half. Finely chop the rosemary leaves.
- Put the sweet potato into a baking dish. Add garlic, ½ tsp chili flakes, 1 tsp oregano, finely chopped rosemary leaves, and 20 g of olive oil. Mix everything well.
- Make some space in the middle and place 100 g of feta in the center.
- Bake for 30–40 minutes until the sweet potato is soft.
- Five minutes before the sweet potato is done, start cooking your pasta. Bring water to a boil and add salt. Add 200 g of pasta and cook it 1 minute less than the time on the package. This way, you’ll have it al dente in the sauce.
- At the end of cooking, save a cup of pasta water before you drain the pasta. We used 150 g of pasta water in this recipe, but keep 200–250 g just in case.
