  • A steamer works best, but if you donโ€™t have one, a sieve that fits over your pot will do!

  • Weโ€™re using frozen gyoza. You can also use potstickers.
  • Also, cut smoked tofu into pieces, and weโ€™ll fry them until crispy.

How to make dumpling soup with frozen dumplings?

Prepare the Broth

Letโ€™s start with a simple dumpling broth recipe. Itโ€™s the perfect soup for dumplings, full of rich flavor!

Heat a pot with a bit of oil. Skip the olive oil and use a neutral vegetable oil instead. So it doesnโ€™t overpower the Asian flavors. Add grated garlic, ginger, and chiliโ€”stir and sautรฉ for 2 minutes on medium heat.

Next, add miso paste and soy sauce and mix well. Then pour in water and vegetable bouillon. Or just add your vegetable broth or stock. Stir and bring to a boil. Simmer for 2 minutes. Crumble in nori and let the broth simmer for 3 minutesโ€”itโ€™s done!

Steam the Veggies

Weโ€™re making a vegetable dumpling soup! Our choice? Greens, beans, and bok choy. Why? Because these veggies are easy to find.

Wash and chop the green beans and cut the bok choy. Place a steamer over the simmering broth. Add the green beans and steam for 5 minutes. Then, add the bok choy and steam for another 5 minutes. Remove from heat and set aside.

Fry the Tofu & Gyoza

Cut the tofu into pieces. Use smoked tofuโ€”itโ€™s delicious after frying, and you donโ€™t need extra spices. While the veggies steam, heat a pan and fry tofu on medium heat until crispy.

Ingredients
  

For the broth:

  • 20 g vegetable oil
  • 10 g grated garlic
  • 10 g grated ginger
  • 25 g miso paste
  • 10 g soy sauce
  • 800 g vegetable stock or water and vegetable bouillon
  • ยผ tsp chili pepper
  • 1 sheet nori

For steaming:

  • 100 g green beans
  • 100 g bok choy

For gyoza pan-frying:

  • 15 frozen gyoza
  • 100 g water
  • 20 g oil 10 g for frying gyoza, 10 g for frying tofu
  • 100 g smoked tofu

Instructions
 

Prepare the broth

  • Prepare 800 g vegetable stock. Chop one nori sheet. Grate 10 g of garlic and 10 g of ginger.
  • Set your stove to medium heat. We used a setting of 5 out of 9. Add 20 g of vegetable oil to the pot.
  • Add 10 g of grated garlic, 10 g of grated ginger, and ยผ tsp chili pepper. Sautรฉ for 2 minutes.
  • Add 25 g miso paste and 10 g soy sauce, mix well. Add 800 g vegetable stock. We added water and vegetable bouillon. And let it simmer for 2 minutes.
  • Add nori to the broth and let it simmer for another 3 minutes.

Steam the vegetables

  • Cut 100 g of green beans. Cut 100 g of bok choy into medium-sized pieces.
  • Place the steamer over the broth.
  • Steam 100 g green beans for 5 minutes.
  • Add 100 g bok choy and steam everything together for another 5 minutes.

Fry tofu and gyoza

  • Prepare 15 gyoza. Fry them in a pan or air fryer. For both methods, check our video and blog post on cooking gyoza.
  • For pan-frying: Add 10 g of oil to a pan. Set the heat to medium-high (we used 6 out of 9 on our stove). Place the frozen gyoza flat-side down in the pan. To make the bottoms crispy, dip them directly in the oil or brush them with oil.
  • Cover with a lid and fry for 2-3 minutes, until the bottoms are crispy. Carefully open the lid, add 100 g of water, and close the lid again.
  • Set the heat to medium-low (we used 2 out of 9 on our stove). Steam with the lid on for 5-7 minutes until all the water evaporates.
  • Cut 100 g of smoked tofu into pieces. Heat another 10 g of oil and fry the tofu until golden brown.

Time to serve! In a soup bowl, add the broth, beans, bok choy, gyoza, and tofu. Pour in extra broth and sprinkle with green onions.
