To make these potato noodles, you need only three ingredients. First, peel potatoes and cook them in water. Once they are soft, drain and mash. Do not add extra ingredients to mashed potatoes. Then, add potato starch to mashed potatoes. Use an equal amount of potato starch to that of mashed potatoes. For example, to 200 g of mashed potatoes, we add 200 g of potato starch. Add water (around 60-90 g) until you reach the right dough consistency. The perfect consistency is when you can knead and shape the dough. But a dough isn’t sticky. To reach this consistency, do not add all the water at once. Add some water, knead the dough, and test the consistency. Keep adding water until the dough is perfect. You can now begin to roll the noodles!
Next, form noodles with a diameter of about 7 mm. Bring water to a boil, add some salt, and add potato noodles. The cooking time is very short. Cook the noodles in boiling water for 1-2 minutes. As soon as noodles float on the surface, they are ready. Remove them. Put noodles in a hot sauce and mix. Add vegetables if you like. We chose steamed broccoli. Ingredients
- 200 g mashed potatoes about 300 g of unpeeled and uncooked potatoes
- 200 g potato starch
- 2 g salt ⅓ tsp salt
- 60-90 g room temperature water
- 300 g broccoli optional
For the sauce:
- 1 tsp chili flakes
- 5 g grated garlic 1 clove
- 20 g soy sauce
- 10 g maple syrup
- 6 g rice vinegar
- 6 g hot sesame oil
- 1 tsp sesame seeds optional
Instructions
- Prepare the sauce. Combine 1 tsp chili flakes, 5 g grated garlic (1 clove), 20 g of soy sauce, 10 g of maple syrup, and 6 g of rice vinegar. Heat 6 g of sesame oil until hot, add to the sauce,, and mix well. Leave to infuse.
- Peel 300 g potatoes and cook until tender. Drain all the water. Mash potatoes into a puree. You need 200 g of mashed potatoes to make the noodles.
- To 200 g of mashed potatoes, add equal amounts of potato starch (200 g) and ⅓ tsp salt. Mix.
- Gradually add water (around 60g – 90 g). Add 60 g of water and check the dough’s consistency. You should be able to knead, roll, and shape the dough. But it should not be sticky. Add more water till you achieve this dough consistency.
- Form pasta with a diameter of approximately 0.7 cm.
- Bring water to a boil, salt it, and carefully put the pasta into the boiling water. Cook for around 1-2 minutes. As soon as the pasta floats to the surface, remove it from the water.
- Mix the sauce and noodles.
- Cook or steam 300 g of broccoli. And them to potato noodles.
