First, fry vegetables: onions, bell peppers, and garlic. Add spices. Add the passata and lemon juice to emphasize the flavor. Then, add almond butter to make the soup extra creamy. Finally, put in canned black beans with liquid. Let it cook, and allow the flavors to blend. Remove it from heat and leave it for a while to infuse.

Ready for tips and hacks? First, prepare the spices, chop the vegetables, and measure the ingredients before cooking. Why? Because most cooking steps in this recipe take 1 to 2 minutes. And you need to stir often. You won’t have enough time to measure and chop during cooking. Second, cook the soup on a high heat. We used 7 out of 9. And 9 is max for our stove.

Third, check the ingredients of canned black beans. If black beans contain salt, do not add any. Add a little and taste the soup to see if it’s not too salty. Next, check if canned black beans also contain any spices. We recommend using black beans without spices. If they already contain spices, adjust the spice blend.

Fourth, do not skip almond butter; it adds so much creaminess! You can use peanut butter or cashew butter instead. We tested it, and it tastes different. But it’s still delicious. Use nut butter with nuts and oil as ingredients. No sweeteners or other additives.

Finally, use canned black beans with liquid. The liquid combines spices, almond butter, and passata. And creates extra flavourful broth. The ingredients in a can of black beans may vary from brand to brand, so measure it before cooking. We used two cans of black beans. The weight of the beans containing liquid was around 800 g.

For creaminess and nutty flavor, almond butter. To balance sourness and add a bit of sweetness, we use cinnamon, almond butter, and rosemary. And you don’t need to add any sugar.

Fry vegetables first and then add spices. Why? This way, the soup develops a unique combination of flavor, spices, and vegetables. Add spices and fry, stirring for 30 seconds to release their flavors. Pour the passata into the pan quickly to prevent the spices from burning.
We recommend adding salt at the end of the cooking process. As mentioned before, add salt only if canned beans do not contain any. Add a little at a time to make sure the soup is not too salty.

Ingredients
  

  • 2 cans of canned beans 800 g – weight with liquid; do not drain the liquid; we are using it too
  • 25 g oil
  • 80 g onions
  • 100 g bell pepper
  • 5 g garlic
  • 100 g passata
  • 40 g almond butter
  • 15 g lemon juice

Spices:

  • 1 tsp rosemary
  • 1 tsp paprika
  • 1 tsp coriander
  • ½ tsp black pepper
  • ½ tsp cinnamon
  • 1 tsp salt if the canned beans are without salt, but if canned beans are salted, do not add any salt

Instructions
 

  • Mix all the spices except salt: 1 tsp rosemary, 1 tsp paprika, 1 tsp coriander, ½ tsp black pepper and ½ tsp cinnamon.

  • Finely chop 80 g of onion, 100 g of bell pepper, and 5 g of garlic.*

  • Cook the soup on high heat (7 out of 9). Heat 25 g of oil (I am using olive oil) in a pan and add onion. Fry for 7-10 minutes.

  • Add garlic, and fry for 1-2 min.

  • Add bell pepper, and fry for 5 minutes.

  • Add spices, fry for about 30 seconds, and let them develop the flavor.

  • Add passata, and fry for 2-3 minutes.

  • Add 40 g of almond butter, and fry for 2-3 minutes.

  • Add 15 g of lemon juice. Add two cans of black beans with liquid (800 g weight with liquid). Cook under the lid for 7-10 minutes, stirring constantly. Check if canned beans contain salt. If canned beans do not contain any salt, add 1 tsp salt. If beans do contain salt, do not add any salt. Add a little at a time to avoid oversalning.

  • Remove from heat and let the soup sit for 15 minutes.
