This pasta with ricotta cheese and spinach is extra creamy and smooth. You only need a few simple ingredients to make it. It’s pasta, ricotta, and frozen spinach. Then you need onion, garlic, and simple spices. Do you have frozen spinach in your freezer and ricotta in the fridge? Let’s start cooking. The pasta will be ready in 15 minutes.

Start cooking tagliatelle or any other pasta you like. Cook until al dente. In the meantime, let’s make ricotta and spinach sauce.

Finely chop the onion. Add oil to a pan. Add onion and fry until it’s transparent. Cut garlic cloves in half and fry it with onion. Fry for 2-3 minutes. Then remove. We use garlic cloves only to add some flavor. That’s why we remove them. We want pasta with ricotta cheese and spinach to have a smooth, creamy ricotta taste. In combination with spinach, it becomes fresh and slightly earthy. And garlic would add a very strong flavor. So remove it after frying shortly.

Add frozen spinach. We love using frozen spinach because it’s always in the freezer. You can buy it in advance. And keep it in the freezer for weeks. You can use it when you don’t want to cook longer. And go for simple recipes like this one. We recommend using young frozen spinach. Its leaves are small, and the sauce becomes extra smooth. But if you don’t have it, go for regular frozen spinach.

Simmer spinach under the lid until it defrosts. Bring to a boil. Add ricotta cheese. Stir to combine. Bring to a boil.
