These low-sugar granola bars are extra filling. You can have them as a breakfast bar or as a snack on the go. Prepare them on the weekend and keep them in the freezer. If you aim for a snack version, you can separate the dough into more servings.
You need simple ingredients to make low-sugar granola bars. These are dates, rolled oats, walnuts, a pinch of salt, and melted chocolate. Use dark chocolate to make the bars extra low in sugar. The higher the percentage of cocoa in the chocolate, the less sugar it contains.

Start with making date paste. That’s the ingredient we prepare to sweeten the bars. Soak dates in boiling water for at least 30 minutes. You can soak them longer, but not less than 30 minutes. Drain the water. Add dates to a blender. Pour cooled boiled water and blend into date paste.

Add coconut oil to a frying pan. As soon as the oil melts, add rolled oats, chopped nuts, and a pinch of salt. Use rolled oats in this recipe, not quick-cooking oats. We use walnuts, but you can use any nuts you like. Fry until crispy. Cool down and combine with date paste.
Cover the baking form with parchment paper and press the dough inside. Precut into servings. Place in the freezer. After 2 hours, separate into servings. Melt chocolate and sprinkle it on top. If you love chocolate, you can dip half of the bar into chocolate. But this way, you will need more chocolate for this recipe.

You can keep the bars in the freezer for up to 1 month. It takes around 15 minutes to defrost if you remove the bars from the freezer.
