This is the best-fried rice using cauliflower you will ever try. It’s full of flavor, fluffy, and tender. And the best part about it is that the grains still have a satisfying crunch! Like rice!
First, we are making fried rice using cauliflower as the base. So start by cutting the cauliflower into florets and grating it. Use a coarse grater to make cauliflower vegetable fried rice fluffy with a satisfying crunch. This is the most important tip in this recipe. The grains will not be rice-like if you don’t use a grater with big holes. You can use a food processor, a regular four-sided grater, or a hand mandoline. But make sure you go for a coarse grater. We tried this recipe with a fine grater and weren’t unhappy. The cauliflower grains were too small. They stuck together and were not fluffy.
Cut carrots into cubes. This will take some extra minutes, but the texture of cauliflower fried rice will be more defined. Not mushy. This could happen if you grate the carrots.
Grind onion, garlic, and spices. This way, we combine oils and flavor and prepare the perfect base for fried rice with cauliflower. But not everyone has a mortar at home. We also didn’t have it as we filmed a video. So we found a substitute. A small bowl and a muddler. It worked so well to grind the vegetables and spices.
Add oil to a frying pan. We recommend using odorless vegetable oil. This way, you will taste the flavorful spice blend and cauliflower, and the oil will not dominate.
Add everything to a pan and fry for 4 minutes. Use cooking mode 6 out of 9. Add carrots and simmer for 5 minutes. Add grated cauliflower and spices to get this amazing yellow color. We added turmeric, coriander, cumin, and salt. Turmeric works so well with cauliflower. It adds an earthy, warm flavor. And, of course, this amazing sunny color!
Stir and fry on maximum heat for 10 minutes.
