Did you know you can make dairy-free protein bars without protein powder? And dairy-free? We have a recipe for you. You don’t need any refined sugar to make it. Or any sugar syrup. Only natural ingredients.
Soak dates in boiling water. Drain the water. Pour fresh boiling water to dates and blend in a blender. Add water gradually to create a date paste. Add ⅓ of water and blend. Pour ⅓ of water and blend again. Finally, add all remaining water. Why not add all the water at once? Because it splashes and is very difficult to blend. Step-by-step water addition is the easiest way to blend. Date paste is our secret ingredient to make bars sugar-free. Without adding refined sugar.
Combine date paste and almond flour into the dough. Line a baking form with parchment paper and press the dough into the form. Almond flour is the ingredient we use to make dairy-free protein bars extra rich in protein. As you can see, you don’t need any powder to make protein bars!
Cut nuts and sprinkle over dough. Press them into the dough. We used a rolling pin to press the nuts. But go for anything heavy and flat. We picked cashew nuts. But you can go for any nuts you like. Peanuts are extra-rich in protein. They are also a fantastic choice.
Cut the dough into bars in the baking form and then freeze it. After freezing, you can easily separate the bars along the pre-cut lines. Remember to cut before freezing, as cutting the frozen dough is hard.
After 2 hours, separate into bars. Dip in melted chocolate. Place in the freezer for 30 minutes. The dairy-free protein bars are ready!
