You need a few ingredients to make these simple cheese muffins. Eggs, buttermilk, all-purpose flour, baking powder, and odorless oil. And, of course, cheese. We use two types of cheese in this recipe. Cheddar cheese for a rich and savory taste. And mozzarella cheese. For mild and a bit sweet note. You can use other cheese types. But make sure one type of cheese melts perfectly. This way, you get an extra gooey and soft muffin.
The kitchen tools you need are simple. 2 bowls and a muffin tin.
Start with grating mozzarella and cheddar cheese. We recommend using the coarse grater. This way, simple cheese muffins will have a soft and tender texture. Chop dill. Use another type of herb if you don’t like dill.
Mix liquid ingredients. In a bowl, add eggs, buttermilk, and odorless oil. Add grated cheese. Mix again. In a separate bowl, mix dry ingredients. All-purpose flour, baking powder, and a little bit of salt.
Sift dry ingredients into the liquid and mix. Add dill and combine.
Fill muffin molds. Muffins tend to grow in the oven. Fill each mold about two-thirds full with batter. This will prevent muffins from overflowing and uneven baking.
We love using silicon molds for these simple cheese muffins. Muffins don’t stick to silicon. And you can remove them so easily. Except for this, you can keep them in silicon molds and reheat as many as you want. If you don’t have silicon molds, that’s not an issue. You can also use steel molds or muffin papers. The taste is the same. Using silicon molds makes the process more convenient.
Bake at the lower level for 20 minutes. Cool for 15 minutes.
